The Flowcode GSM EBlock doesn't seem to do Caller ID which is also sent via RS232 and I was wondering why not?

Hello,
Caller ID is a service provided by the mobile network, there will be a way to do it but it is not straightforward and I do not know enough about the service providers to be able to point you in the right direction. There may be a tutorial online on how to get the caller ID using an embedded GSM module.

Can an iPhone be converted to CDMA from GSM for use on Verizon or Sprint? I understand that GSM and CDMA are two different communication languages. Can the software in the iphone be altered so that it can speak CDMA language? Does it require a hardware change? Has anyone accomplished the conversion?

I think you'd be better asking on a specific iPhone forum. Personally I know nothing about iPhone other then its limitations, its all about the open source android for me and to be fair I still wouldn't have a clue on this
