I see that there is f32446RE in the list of supported chips, is it possible to use STM32F446RCT6 instead of F32446RE, according to STM these are very similar chips (same pinout) only the amount of memory is different.

Yes, it is possible to use 32F446RE setting to create project for an 32F446RC device.
